joceline: @ CJ hi ..您好!首先可以自行拿捏家里的烤箱温度。不会太强热,适合的时间和温度可以将蛋糕烤得刚刚好。空手脱模的时候,蛋糕的褐色皮就会自然脱粘在 aluminium 的模型里边了。还有比较高水分的材料脱模会比较美丽。比如黑芝麻粉、cheese 粉做出来的戚风脱模时候就加于注意的。谢谢!

joceline: Beh,您好。 您的问题不很清楚的。 UHT cream是液体状。Cream cheese 是块状。 Cream cheese 加 糖搅拌机打了就会变软成均匀的 cream了。然后加入 UHT 奶油 (UHT whipping cream)是OK的。不会水油分离的。担心是材料不对吗?可以try Anchor 牌子蓝色盒装的 UHT whipping Cream。烘焙材料店可以买到。不难找。感恩您!
